The time has come: the first strawberries are being harvested and we can enjoy these home-grown flavour bombs until well into September. What do you do with an abundance of strawberries? Use them in this delicious strawberry cheesecake by TV chef and presenter Miljuschka Witzenhausen. We share the recipe with you.

Miljuschka Witzenhausen about this strawberry tart: “One of the people I like to cook for most doesn’t like heavy cheesecakes. For him I came up with this lighter version with cottage cheese and fruit. After all, the way to love is through the stomach.” The editors of Gardeners’ World magazine have included the recipe in the special edition ‘From garden to table ’.       1. For the base, grind the biscuits and almond flour in a food processor.
      2. Melt the white chocolate in a bain-marie: place it in a bowl over a pan of hot water, making sure the base of the bowl does not touch the water, and stir regularly until the chocolate has melted. Stir the chocolate through the almond flour, spoon the mixture into the springform pan and press the base down. Put away in the freezer.
      3. Puree 500 g strawberries with the sugar with a hand blender. Push the pureed strawberries through the sieve, so that the seeds are removed. Stir the curd through the strawberries.
      4. Soak the gelatine leaves in cold water until they are slippery. Heat the whipped cream and dissolve the squeezed gelatine leaves in it. Stir the whipped cream through the quark-strawberry mixture. Add the lime zest and lime juice.
      5. Cut the remaining 500g strawberries in half. Press the strawberries with the cut side against the inside of the springform pan, with the point upwards. Pour the quark mixture into the springform pan and put the cake in the fridge for 2 hours.
      6. Remove the cake from the refrigerator, divide the rest of the strawberries over it and sprinkle some icing sugar over it if desired.

      Tip ! Delicious with a dash of balsamic vinegar over it.
